Combining research & expertise
Our research revealed that natural plant-based hydrocolloids can be combined to create an efficient substitute for gelatine.
Our R&D team used both sensory and texture profile analysis (TPA) to develop Syndeo® Gelling. Sensory analysis was at the heart of our applicative research to assess and evaluate the quality, perception and acceptability of products developed by our applicative research team.
By characterising different aspects of the product’s texture using TPA, we were able to define and evaluate 4 key texture attributes important for sensory perception, an use them to improve our ingredient formulation to provide manufacturers with an innovative, multifunctional solution.
