Acacia for better quality and nutrition

Our studies on biscuits and pastry product demonstrated that sweet products featuring acacia gum are popular and considered “high quality” during sensory analysis. The characteristics and nutritional value are improved, compared to control recipes with no acacia gum. Adding acacia gum is a useful tool to improve the Nutri-Score, by reducing sugar content and increasing fibre count – which is increasingly important for consumers.

Acacia also provides technological benefits during dough making and other processes. Achieving a smooth and homogeneous dough with a developed gluten structure –except for gluten-free products – is essential for a successful recipe and sensory experience. Acacia gum also helps improve other operational steps such as mixing, dividing, moulding and baking, as well as the quality of the final product.

Natural gums are great texturing and suspending agents, as well as binders, stabilisers and emulsifiers in desserts.

Karaya gum is a very efficient texturing agent that offers high viscosity at a very low concentration. In frozen desserts, karaya gum provides freezing stability for easy reheating in a microwave. Karaya gum’s ability to retain water can also help avoid syneresis.

Adding karaya gum to ice cream optimises stabilisation, emulsion, texturing and thickening. Karaya gum works in synergy with other hydrocolloids, including locust bean gum – a common ingredient in ice cream.

Acacia gum is also multitalented, from improving sensory experience to increasing shelf life thanks to better dough hydration over time and moisture stabilisation. Acacia gum contributes to texture, mouthfeel, emulsion, fibre count and stabilisation in desserts. In ice creams, it helps with expansion and incorporating air.

    Dietary applications

    Karaya gum is a natural fiber and an ingredient for weight loss products.

    Recognized as a highly soluble fiber, karaya gum can increase the fiber content of any product formulation. The addition of karaya gum, can, depending on the country legislation, offer the possibility of nutritional allegations like “source of fiber” or “enriched in fibers”.

    Karaya gum is known as a great ingredient in slimming diets, as it provides a feeling of satiety and can be solubilized at cold temperature, which simplifies industrial processing and is useful for powdered mixes.

    Karaya gum also offers stability at a low PH, which is useful for the formulation of dietary sauces and/or salad dressings.

    Finally, karaya gum is stable during freezing and thawing, making it a great additive to use dietetic ready-to-eat meals warmed up by microwaves.

    The karaya gum properties of water retention have been demonstrated and allow the final product to avoid synaeresis phenomenon. Karaya gum has also great synergy with other hydrocolloids, including locust bean gum, which is a common ingredient of weight-loss or dairy-free drinks.

    Acacia gum, a versatile excipient

    Acacia makes its way into capsules, tablets, pills and even denture adhesives.

    The main applications include powder agglomeration thanks to its cohesive qualities, suspension in liquid formulations and tablet coating. Acacia gum is a safe, natural excipient that can be used to coat, glaze, film and agglomerate tablets. It can also encase active substances.

    Acacia is the main ingredient in many chest pastilles and throat gums, and in some countries, it is used as a supplement.

    Other pharmaceutical applications include encapsulating micro-granules and thickening and texturing syrups and lotions. The gum’s natural adhesive and non-cariogenic properties are also very useful in denture adhesives.

    Karaya gum, widely used as a bulk laxative.

    Pharmaceutical applications of karaya gum have been extensively studied. The main current application is as an active agent in bulk laxatives. As such, karaya gum is considered an active substance in medications for intestinal comfort and regulating intestinal transit (in granules).

    Karaya is used in gastric dressings and medications that deliver active substances in the gastro-intestinal tract.

    Additional properties that are useful when formulating medication include:

    • capacity to retain moisture
    • as an adhesive compound for colostomy rings and dental adhesives
    • bulking, thickening and viscosity control agent

    These different applications highlight the versatility and importance of karaya gum in pharmaceutical industry, where it is valued as a safe, natural ingredient with multifunctional properties.
